En este trabajo se estudi la composicin voltil y el contenido de aminas en vinos tintos con diferente turbidez durante su envejecimiento en barricas de roble. Las aminas se forman principalmente durante las fermentaciones alcohlica y malolctica del vino, y su importancia radica en los efectos negativos que presentan sobre la salud humana. Tras 8 meses de envejecimiento, el vino envejecido en barrica sin filtracin previa, present mayor concentracin de steres fermentativos que el vino envejecido tras un proceso de filtracin sobre tierra de diatomeas. Existi gran variabilidad en la evolucin de las aminas bigenas durante el envejecimiento de vino tinto en barrica de roble. Histamina y tiramina se acumularon al inicio del envejecimiento y posteriormente, su concentracin disminuy posiblemente debido a su degradacin. Sin embargo, las concentraciones de putrescina y cadaverina aumentaron en el vino durante el proceso de envejecimiento. El grado de turbidez del vino no influy en la acumulacin de aminas bigenas durante el envejecimiento del vino en barricas de roble.
