Der aufgeklrte und gesundheitsbewusste Verbraucher der heutigen Zeit wnscht sich einerseits hochwertige, naturbelassene, konservierungsstofffreie Lebensmittel. Andererseits verlangt er, dass diese keimfrei und mglichst lange haltbar sind. Jedoch sind Lebensmittel in der Regel nicht frei von Keimen. Sie enthalten neben erwnschten Mikroorganismen, wie z. B. Milchsurebakterien und Kulturschimmel, auch unerwnschte Keime wie Verderbnis und Krankheitserreger. Zu Letzteren gehren die Listerien, wobei von den sechs Spezies, die zum Genus Listeria gehren, Listeria monocytogenes die weitaus bedeutendste humanpathogene Art ist. Dieser Keim ist verantwortlich fr die Listeriose, eine Lebensmittelinfektion. Eine Exposition verluft bei gesunden Erwachsenen meist unbemerkt, stellt jedoch eine Gefahr fr Schwangere und deren ungeborene Kinder, sowie fr Immungeschwchte, vorwiegend ltere Personen, dar. Eine Infektion mit L. monocytogenes kann zu Frh oder Totgeburt und Neugeborenenlisteriose bzw. zu Hirn und Hirnhautentzndung und Sepsis fhren. Diese Krankheitsformen verlaufen in 20 30 % der Flle tdlich. L. monocytogenes ist in der Umwelt weit verbreitet. Aus diesem Grund gibt es nur wenige frische Lebensmittel, die dieses Bakterium nicht enthalten. Besonders anfllige Produkte sind neben Weichkse, Wurst, Fertigsalaten, gekhlten Fertiggerichten, abgepacktem Gemse und Rohkost auch abgepackter Lachs und Rucherfisch. Der Verzehr der letztgenannten Produkte stellt einen ListerioseRisikofaktor dar, da L. monocytogenes sich leicht in geruchertem Fisch nachweisen lsst, bzw. die Inokulation von geruchertem Fisch mit L. monocytogenes zu einem sehr starke
