Las frutas son productos altamente perecederos; comnmente, hasta un 23 % se pierden, (FAO, 1995), debido a deterioros microbiolgicos y/o fisiolgicos, prdida de peso por deshidratacin, dao mecnico durante la cosecha, envasado y transporte. Adems hoy en da las buenas costumbres de alimentacin se han visto afectadas por un sinnmero de factores, lo cual ha ocasionado que en la dieta alimenticia el consumo de fruta se haya disminuido y sustituido por "comida chatarra". En este libro, se da a conocer el proceso de deshidratacin osmtica directa como una tecnologa que se puede emplear para prolongar la vida til de las frutas, evitando su deterioro e inclusive brindando una apariencia ms aceptable y agradable para los consumidores. Este tipo de conservacin contribuye a disminuir prdidas poscosecha, ya que al aplicar procesos agroindustriales, la oferta y demanda se equilibran, es decir que se ha convertido en la alternativa que permite estabilizar la produccin primaria y su disponibilidad durante todo el ao, siendo beneficiados los productores y los consumidores.
