Lamlioration de la viscosit et de la densit nergtique des bouillies infantiles a t ralise grce lutilisation des farines composes milnibpatate douce et milnibpulpe de nr. Laddition de pulpe de nr et de farine de patate douce aux bouillies a permis dobtenir des densits nergtique suprieures celles de bouillies locales (35 45 kcal/100 ml). Les teneurs en protines et en lipides de lingrdient alimentaire base de graines de nr et de lgumes (NELEG) sont 4 et 5 fois respectivement suprieures celle du cube commercial Maggi Poulet. Au cours de la conservation, ces farines nont pas subi de doxydation. Ce livre peut tre profitable aux formateurs, aux ducateurs sociaux, aux nutritionnistes et aux mamans.
