La Regin Mixteca dentro del Estado de Oaxaca cuenta con diferentes poblaciones en las que se cultiva la denominada pitaya de mayo (Stenocereus griseus) . Dadas las caractersticas del cultivo de esta fruta, hoy en da se esta convirtiendo en una actividad econmica factible capaz de otorgar beneficios significativos a los agricultores. Por lo anterior expuesto surge el inters de otorgar a los productores de esta regin, propuestas que los conduzcan a incrementar la calidad del producto, permitindoles conservar de mejor manera y por mayor tiempo las cualidades fsicas y qumicas de este fruto as como mejorar la calidad de presentacin al consumidor, caractersticas que les permitirn alcanzar el nivel de calidad necesario para acceder a nuevos mercados en los que puedan ofrecer su produccin e incrementar as sus ventas. En este libro se presenta un concepto de sistema integral el cual busca otorgar una respuesta a la serie de necesidades que la pitaya; presenta actualmente a lo largo de las tres principales fases o etapas por las que debe pasar desde que es cosechada en el centro de cultivo hasta que llega finalmente al consumidor.
