El conocimiento del proceso de manufactura para obtener el chocolate a partir de las semillas del fruto del rbol de cacao ha sido transmitido de generacin en generacin. Cuando se inici el estudio de este proceso se crea que durante la etapa de la fermentacin el objetivo principal era el de eliminar la pulpa mucilaginosa que rodea la semilla. Con ello se facilitara el secado y su almacenamiento. Posteriormente se observ que durante el proceso cuando se omite la etapa de fermentacin, las semillas de cacao son amargas y astringentes y posteriormente cuando son procesadas para obtener el chocolate no se desarrolla su sabor y aroma caracterstico. Hoy se sabe que la principal razn de la fermentacin durante el proceso de elaboracin del chocolate es la de inducir los cambios bioqumicos para que posteriormente se desarrolle el color, el aroma y los precursores del sabor. Estos cambios bioqumicos fundamentalmente son llevados a cabo por microorganismos. Los que se encuentran activos durante la fermentacin del cacao se desarrollan en sucesin. En un principio dominan las levaduras, a continuacin las bacterias cidolcticas y acticas, y finalmente las bacterias esporuladas
