Dieser Umstand manifestiert sich unter anderem in dem sprunghaft gestiegenen Absatz von BioProdukten, welche vermeintlich ein Garant fr Gesundheit sind. Ob ein Lebensmittel jedoch als gesund oder eher ungesund eingestuft wird, hngt rein wissenschaftlich betrachtet einzig und allein von den jeweiligen Inhaltsstoffen und deren Wirkung auf den menschlichen Organismus ab. Dies gilt natrlich auch fr industriell hergestellte Nahrungsmittel, wie beispielsweise Margarinen. Auf dem deutschen Markt existiert eine groe Vielfalt an Margarineprodukten, welche im Haushalt und in der Lebensmittelindustrie hufig eingesetzt werden. Die bei der Herstellung solcher Margarineprodukte eingesetzten Pflanzen und Fischle knnen transFettsuren enthalten. Fischle werden nur noch selten eingesetzt, besitzen allerdings aufgrund der Hydrierung zur Entfernung unerwnschter Geruchs und Geschmacksstoffe hhere TFAGehalte. Pflanzenle weisen auerdem unterschiedlich starke Konzentrationen an Phytosterolen auf. Im Gegensatz zu den Phytosterolen haben transFettsuren nachweislich negative Auswirkungen auf den menschlichen Krper. Diese Eigenschaft wurde bereits in einer Vielzahl von wissenschaftlichen Studien belegt. Deshalb ist es wichtig, einen berblick ber den Gehalt an transFettsuren in Margarineprodukten zu schaffen.
