In Deutschland gibt es derzeit eine Flle und Vielfalt an Lebensmitteln zu Preisen, die gemessen am Durchschnittseinkommen so niedrig wie nie zuvor sind. Dies ist unter anderem das Ergebnis einer immer effizienter organisierten Supply Chain der beteiligten Unternehmen. Mit 5.900 Unternehmen, mehr als einer halben Million Beschftigten und einem Umsatz von rund 135 Milliarden Euro im Jahr 2006 zhlt die Ernhrungsindustrie zu den wichtigsten Industriezweigen in Deutschland. Zurzeit wird die Branche vom Wettbewerbsfaktor Preis und dem Druck des Einzelhandels dominiert. Hinzu kommen neue gesetzliche Auflagen, die eine lckenlose Rckverfolgbarkeit von Lebensmitteln verlangen und eine stetig zunehmende Nachfrage nach Frischeprodukten, die stndige Khlung verlangen. In dieser Situation mssen viele Unternehmen der Ernhrungsindustrie neue Wege des Qualittsmanagements und der Kostenreduzierung erschlieen. Die Supply Chain rckt ins Zentrum des Optimierungsinteresses. Das Ziel dieser Studie ist die kurze, kompakte Darstellung von grundlegenden Herausforderungen, die sich den an der Nahrungsmittelindustrie beteiligten Unternehmen in diesem Zusammenhang stellen.
