Dicha mejora se orienta principalmente al cambio de uso de tecnologa pasando de una prctica artesanal a una empresarial industrial, teniendo establecidos objetivos, acciones y estrategias que permitirn el logro de las mismas. Sistema de planeamiento y control de la produccin aplica la filosofa Justo A Tiempo para el aprovisionamiento de materiales, previamente se determin la demanda de los diferentes productos que elabora la panadera, tambin se determin las cantidades ptimas a producir para maximizar las ganancias tomando en cuenta la capacidad de la panadera.
