Se presenta un anlisis de dos iniciativas locales de consumo de alimentos en Crdoba, Espaa. La primera una cooperativa de consumidores y la segunda una cooperativa de produccin y consumo de alimentos ecolgicos. Se narra en primera instancia la forma en que surgen, se organizan y evolucionan con base en la participacin de sus miembros. Es posible ver diferencias no solo en cunto a quines participan en cada una de las iniciativas, sino tambin la forma en que participan y se apropian del proceso. El presente trabajo es una primera aproximacin para tratar de entender los procesos humanos y por ello sociales que se estn desarrollando en la propuestas ciudadanas para hacer un consumo ms consciente y crtico. Esperamos que el lector quede motivado para conocer ms de este tipo de organizaciones sociales que independientemente de sus diferencias, buscan consolidar formas diferentes de satisfacer sus necesidades bsicas.
