A couple of years ago I was commissioned as a chefconsultant to create an authentic Mexican menu concept for a restaurant in Key West Florida and ultimately it evolved into much more than authentic Mexican as I could not escape all of the culinary influences in the Keys. The cuisine it became I decided to call Key West Mex.
