La presente investigacin parte de la importancia del caf en Mxico y su compleja problemtica. Por su creciente demanda en el mercado, los cafs diferenciados representan una oportunidad para que los productores accedan a mejores precios y puedan seguir aprovechando al caf como eje de desarrollo comunitario y regional. Entre los cafs diferenciados los esquemas de certificacin orgnica y de comercio justo, as como la calidad del producto ofrecen ventajas competitivas para el sector cafetalero. Esto conlleva a la necesidad de realizar estudios integrales sobre los factores que influyen en la calidad del caf orgnico y que permitan disear estrategias y acciones para su mejoramiento, defensa y certificacin. Por ello se realiz un estudio integral del agroecosistema caf orgnico en Mxico con el objetivo de determinar la influencia de los factores ambientales, genticos, agronmicos y sociales sobre la calidad fsica y sensorial del caf producido por organizaciones cafetaleras distribuidas en regiones de Chiapas, Veracruz, Oaxaca, Puebla y Guerrero.
