Il a eu pour clients et parfois pour amis toutes les gloires de son poque. Il est mort couvert d'honneurs, en 1935, 89 ans.Ecrivain luimme, mari d'une potesse, il disait : " Un menu est avant tout un pome. " Son apport la cuisine moderne est considrable. Il a cr des milliers de plats, dont la fameuse " Pche Melba ", ddie la meilleure cantatrice de son temps.Sa vie ne se limite toutefois pas aux seuls fourneaux. Son amiti avec Csar Ritz pour le meilleur et pour le pire , leurs aventures qui les ont conduits Monaco, Lucerne, Rome, New York, au Savoy et au Carlton de Londres, enfin au Ritz de Paris, constituent un vritable roman.Il avait fait sienne la devise de BrillatSavarin : " La dcouverte d'un mets nouveau fait plus pour le genre humain que la dcouverte d'une toile. ".
