Con el objetivo de conocer la eficiencia y la efectividad de la actividad de control sanitario oficial de alimentos en los distintos tipos de establecimientos, se ha realizado un estudio de las visitas de control oficial a los establecimientos alimentarios de la provincia de Granada y de los incumplimientos detectados. En este trabajo hemos entendido que existe efectividad cuando hay asociacin estadsticamente significativa entre el nmero de visitas y las deficiencias detectadas y sta es positiva, esto es, cuantas ms visitas de control se realicen ms deficiencias se detectan. Tambin sern efectivos los controles si la tendencia de las deficiencias o incumplimientos detectados en los establecimientos disminuye de manera significativa estadsticamente. Hemos valorado la eficiencia comparando entre distritos y entre establecimientos el nmero de visitas necesarias para conseguir que las deficiencias o incumplimientos disminuyan. Para alcanzar el objetivo planteado se ha realizado un anlisis descriptivo de la provincia de Granada, de 36 categoras de establecimientos y de los Distritos Sanitarios y un anlisis de series temporales mediante regresin lineal multivariante.
