El sistema de calidad HACCP, es un sistema de gestin de calidad abierto y especfico para cada producto y proceso productivo, reconocido internacionalmente para abordar los peligros biolgicos, qumicos y fsicos mediante la previsin y prevencin en lugar de la inspeccin y comprobacin final del producto. Por ser un sistema abierto y definido solo por las caractersticas del producto y su proceso, es importante para su efectiva aplicacin la regulacin de los peligros de cada uno de ellos a fin de no dejar librado a la subjetividad del implementador su determinacin. En la implementacin por etapas del sistema HACCP, se trabaja con el rbol de decisiones para la identificacin de los PCC, tarea que parece ser sencilla ya que si se siguen las preguntas en el orden dado, todo estara resuelto, pero por el contario esta simplificacin producto de la amplitud de la norma, puede generar un sistema en donde sobreabunden los PCC porque todo parece ser un riesgo potencial, o por el contrario nada es riesgoso en el proceso de elaboracin.
