Dieser Effekt wurde zurckgefhrt auf die positiven Wirkungen fetten Fischs, welche sich auf seinen hohen Gehalt an langkettigen Omega3Fettsuren begrndet. Inzwischen haben intensive Forschung und zahlreiche wissenschaftliche Studien die positive Korrelation zwischen langkettigen Omega3Fettsuren (EPA und DHA) und der Prvention von HerzKreislaufErkrankungen besttigt. Darber hinaus weisen Omega3Fettsuren entzndungshemmende Wirkungen auf und beeinflussen das Immunsystem in gnstiger Weise, worauf im Hauptteil der Arbeit noch eingegangen wird. Die Lebensmittelindustrie hat die vielfltige Bedeutung von Omega3Fettsuren fr die Gesundheit lngst erkannt und in den letzten Jahren innovative, mit Omega3Fettsuren angereicherte Produkte, sogenannte funktionelle Lebensmittel", auf den Markt gebracht. Dabei stammt das Konzept solcher Lebensmittel mit Zusatznutzen fr die Gesundheit ursprnglich aus Japan, wo schon in den 1980er Jahren funktionelle Lebensmittel vermarktet wurden. Das Ziel der vorliegenden Diplomarbeit ist die berprfung und kritische Bewertung funktioneller Lebensmittel in Hinblick auf ihren Beitrag zu einer ausgewogenen Ernhrung und zur adquaten Versorgung mit Omega3Fettsuren, auch vor dem Hintergrund einer wirksamen Prvention von Koronarkrankheiten. Es soll dabei die Frage beantwortet werden, ob und inwiefern der Bedarf an Omega3Fettsuren durch den Verzehr supplementierter Lebensmittel gedeckt werden kann.
