Any process technology can only survive on the basis of time to time modification over conventional methods. So the sugar industry also needs modification on continuous basis. In the present Monograph three basic issues have been compiled out of authors published work. The content of the Monograph relates to chemistry of sugar manufacturing, clarification and quality assessment of end product i.e. sugar. The sugar making is basically a chemically reactive system. As such chemical balancing of the entire clarification zone has been projected in initial part of this Monograph. Secondly the clarification process has been taken up and the option proposed is by means of mechanical system instead of using chemicals. Lastly the end product has been described for its quality assessment. Besides this, the means to enhance its quality has also been the part of compilation in the said Monograph. All the parameters dealt in the Monograph have been proposed in optional mode from conventional process linked with theoretical & practical observations. All the methods proposed in the Monograph may prove meaningful one or other day for the sugar industry.
