El autor, Irving Quiroz, es un chef mexicano con especialidad en panadera y repostera. Naci en Toluca, Estado de Mxico, donde aprendi el oficio de panadero de su padre y abuelo. Se ha desempeado como chef instructor y asesor de empresas reconocidas internacionalmente. Ha colaborado en programas de televisin y fue participante del programa televisivo Top Chef Mxico 2016. Actualmente es director de Aula Sabor, un espacio de perfeccionamiento gastronmico en la ciudad de Monterrey. Irving Quiroz es tambin autor de Panes mexicanos, libro editado por Larousse en 2014.
