La estacionalidad es uno de los problemas de la lechera tropical, pues buena parte de la produccin se tiene que vender en condiciones de exceso de oferta y, consecuentemente, a menor precio. Esta variacin de la produccin primaria de leche tambin implica un problema en el programa de produccin anual de las plantas industrializadoras de leche, ya que abastecen un mercado cuya demanda cambia menos durante el ao. Adems de la variacin en el volumen de la produccin de leche en los meses de lluvias, tambin varan los porcentajes de los componentes de la leche, siendo menores los de grasa y de slidos. Esto tambin ocasiona problemas de rendimientos y formulacin a los procesadores de quesos y otros derivados de la leche. En este libro se analiza la factibilidad para construir una planta deshidratadora y as secar los excedentes de leche y ponerla a disposicin en epocas de baja produccin. Este anlisis ayuda a clarificar los riesgos de la inversin y pretende servir tanto a productores primarios como a inversionistas e instituciones de fomento econmico.
