Procesamiento en Hojuelas Fritas de 31 Variedades de Papa Nativa: Evaluacin de su aptitud en relacin al manejo agronmico e,Used

Se condujeron dos estudios de fertilizacin fosfrica y orgnica, en comunidades alto andinas de Junn y Huancavelica en el Per, los cuales se encuentran a mas de 3250 m.s.n.m., que involucraron 36 variedades de papas nativas del centro de los Andes y algunas variedades mejoradas como referencias y patrn, seleccionadas todas ellas por su alto contenido de materia seca, contenido de antioxidantes naturales, cualidades nutritivas y alta calidad culinaria. Los objetivos de los estudios fueron determinar la influencia de la localidad, tipo de fertilizante y el nivel de fertilizacin en las variedades nativas para la calidad de fritura como hojuelas fritas tipo chips, identificando los mejores tratamientos y variedades. Los fertilizantes empleados fueron fosfato diamnico (0, 80 y 160 de P205) y estircol de ovino como fertilizacin orgnica (5, 10, 15 t/ha). Esta investigacin se realiz con el apoyo del Centro Internacional de la Papa, Dr. Andre Devaux y Dr. Kurt Manrique y el Instituto Nacional de Investigacin Agraria del Per, Dra. Noemi Zuiga y Ing. Ciro Riberos.
