El presente trabajo de ttulo se efectu con la finalidad de determinar el proceso ms favorable para mejorar la calidad de la miel de la regin de Coquimbo y evaluar su conveniencia econmica. Para ello se consider la variacin de humedad y/o HMF de sta como principal tem de costos y beneficios implicados y basndose en el criterio de Fairtrade Labelling Organization. El trabajo se divide principalmente en dos partes. La primera explica las caractersticas de la miel y el comportamiento que tiene sta frente a diferentes estmulos; la participacin chilena en exportaciones mielferas con respecto a otros pases; la composicin regional de las exportaciones nacionales y la fluctuacin de los precios, destinos, y volmenes a travs de los aos. La segunda parte, describe las diferentes opciones que se manejaron para mejorar los niveles de HMF y/o humedad; la eleccin del mtodo de aplicacin de aire seco y el diseo de un proceso del mismo, el que consta de dos alternativas; y su evaluacin operativa y econmica, mediante balances de masa y energa, junto con una evaluacin de proyecto.
