Los cidos grasos poliinsaturados (PUFAs) tienen importantes funciones fisiolgicas como tales cidos libres o como triglicridos. Estos mtodos han sido seleccionados fundamentalmente en funcin de su eficiencia, es decir, de su viabilidad tcnica, rendimientos, purezas obtenidas, etc. El cido graso mayoritario de los lpidos de esta biomasa de la microalga Phaeodactylum tricornutum es el cido eicosapentaenoico (EPA, 23%), que es un PUFA n3, con numerosos beneficios descritos para la salud, y que est presente en aceites de origen marino y biomasa de microalgas. Sin embargo, las industrias farmacutica y agroalimentaria buscan, cada vez ms, mtodos saludables de obtencin que preserven al mximo la estabilidad de los PUFAs y sean poco contaminantes. En el presente trabajo se aborda el estudio de las etapas de un proceso de obtencin y concentracin de PUFAs que cumpla estos requisitos, adems de proporcionar la mayor eficiencia posible. Estas etapas son: hidrlisis enzimtica de triglicridos ricos en EPA, esterificacin enzimtica selectiva de cidos grasos ricos en EPA y extraccin y purificacin de los lpidos de la biomasa de P. tricornutum.
