El queso San Simn da Costa con Denominacin de Origen Protegida (D.O.P.) se elabora en la comarca da Terra Ch (Lugo), a partir de leche entera y pasterizada de vaca. Es identificado, particularmente, por su peculiar ahumado con madera de abedul y su forma entre trompo y bala, as como la corteza exterior brillante, lisa y de color pardo. Con la finalidad de conocer las propiedades reolgicas y su relacin con las caractersticas bioqumicas de quesos elaborados por las 8 queseras acogidas a la D.O.P., en el ao 2011, se analizaron 16 quesos con periodo de maduracin entre 45 y 50 das (tiempo adecuado para su consumo). Se determinaron parmetros de composicin, fsicoqumicos y la intensidad de la degradacin proteica y se correlacionaron con propiedades mecnicas (fuerza y deformacin de rotura) y viscoelsticas a baja deformacin (ensayos estticos y dinmicos de oscilacin).
