El objetivo de la presente investigacin fue formular una pulpa refinada de pia (Ananas comosus) de la variedad Espaola Roja a travs de pruebas de evaluacin sensorial, previo reclutamiento, seleccin y entrenamiento de un panel de catacin, integrado por 10 personas, quienes demostraron poseer capacidad para discriminar gustos bsicos, asi como su deteccin a umbrales bajos. Se seleccionaron como agentes conservantes: sorbato de potasio, benzoato de sodio, cido ctrico y sacarosa. La proporcin de los cuatro aditivos contemplados fue determinada por medio de la aplicacin de pruebas afectivas, para ello se utiliz un diseo factorial 32 aleatorizado con 2 repeticiones, para un total de 9 unidades experimentales, producto de las diferentes combinaciones de las variables. Una vez realizadas las pruebas sensoriales, se estableci la formulacin de la pulpa segn la concentracin de los aditivos con mayor aceptacin y se elabor el perfil sensorial a travs del anlisis descriptivo cuantitativo del producto formulado.
