Por otra parte, al observar que la arepa igualaba la mesa del pobre y del pudiente, Ramn David Len la ensalz como una expresin eminentemente democrtica del venezolano. Pero la arepa tambin se vio rodeada de prejuicios: tanto que, por ejemplo, un viajero del siglo xix sentenci que la abundancia de clicos que sufran los caraqueos se deba al manitico consumo del pan de maz. En 1945, el escritor Alfredo Armas Alfonzo seal, con pesar, lo siguiente: Es una lstima que nuestros historiadores hayan olvidado este captulo en la historia del pueblo venezolano. Luego de ms de medio siglo, Miguel Felipe Dorta Vargas ha venido a conjurar ese pesar a travs de una acuciosa investigacin en la cual reconstruye la compleja trayectoria que ha descrito este alimento desde que fuera domesticado en los fogones coloniales hasta su industrializacin en el siglo XX, pasando por su presencia en el argot deportivo, el cancionero popular y la cultura publicitaria.
